Thoughts on Recipes: Maternity Leave Edition

I have been off work now for about a week and a half and have decided, at 39.5 weeks pregnant (due June 19th) that there are approximately a million recipes that I would like to try.  Getting my arse off the couch and getting to the store and actually making them in another story—but still.  I was mildly successful in the partaking of two recipes from a blog a friend at work shared with me (and I have recently become obsessed with).

Here are the two recipes that I tried:

BLT Chopped Salad with Corn & Avocado:  Can we just look at how beautiful this salad is?  For those of you who do not do bacon–I think it would be totally fine without.  Avocado and lime and corn and cherry tomatoes and queso fresco (I didn’t have feta and truth be told, love any excuse to use queso fresco on anything)….all that was missing, for me, was a corona and lime…or possibly a nice white wine.  Mmmmm.  It was so delicious.  Also, I like arugula but I’m not a big arugula by itself fan…pairing it with the butter lettuce was fantastic.

Peanut Butter Pretzel Chocolate Chip Cookies:  This was a recipe chosen purely on the fact that I could give a big bag of pretzels to Bjorn and let him smash it up.  Also peanut butter.  And milk chocolate.  I measured out all the ingredients and prepped it for my mom and Bjorn to make the cookies…then I took a nap and when I woke up…little balls of peanut butter, chocolate, pretzel goodness.

Other recipes on my list:

  1. Caprese Shells With Mini Meatballs
  2. Crockpot Cheesesteak Pulled Chicken Sandwiches (this is more for Lars, than me…but looks super duper easy).
  3. Springtime Crockpot Minestrone  …I realize we are entering the summer months but I have just now started noticing asparagus more frequently in the stores.  Mmmm.  Asparagus.  Soup.  Noodles.

I am a little disheartened to hear that the blogger from this site will most likely be writing a cookbook.  As is the case with other bloggers come lately who do quite well in the food blog arena (I’m looking at you smitten kitchen)….their food blogs start to wane as their cookbook waxes.  Does that even make sense?  It was a moon analogy okay?!

Anyway–just thought I would share my unrealistic expectations of myself to try new recipes at this ungodly gestation stage.
